In this region of \u003ca href=\"\/en\/pages\/japan\"\u003e\u003cem\u003eJapan\u003c\/em\u003e\u003c\/a\u003e, only 13 tea farmers still produce gyokuro in the traditional, artisan manner.\u003c\/p\u003e\n\u003cp\u003eFor this gyokuro, the bushes are shaded for weeks with \u003cem\u003esumaki\u003c\/em\u003e, coarsely woven rice straw mats. Elsewhere in Japan, synthetic cloths are used instead. The Gokou cultivar has a characteristic scent of citrus and blossom. The flavour brings intense umami, sweetness, and grassy notes.\u003c\/p\u003e\n\u003cp\u003eGokou was selected in 1953 at the Kyoto research institute, from the seeds of a native plant in Uji.
