Kabusecha Tsuyuhikari is a green tea from Akihito Takaki in Hoshino, Yame, Fukuoka. His kabusecha won the platinum medal and first place in its category at the Nihon-cha Award, a national prize for Japanese tea.
The Tsuyuhikari cultivar was bred in Shizuoka in 1970 and is rarely found outside that prefecture. For kabusecha, the bushes are shaded from sunlight for one to two weeks before the harvest. The scent is fresh, with a hint of blossom. The flavour is mild and sweet.
The name Tsuyuhikari, meaning "dewlight", combines tsuyu (dew) with hikari (light). Tsuyu was carried over from Asatsuyu, the cultivar from which Tsuyuhikari was developed. That cultivar was bred as an alternative to Yabukita, with greater resistance to disease.
Storing loose leaf tea correctly is important to preserve its freshness and flavour. Keep it away from the four elements that affect quality: air, heat, light, and moisture.
