Oolong is a semi-oxidised tea that sits between green and black tea. The oxidation level ranges from 8 to 85 per cent, producing a broad flavour spectrum: from light and floral to dark and woody. The production process is complex and involves techniques such as drying, tumbling, oxidising, rolling, and fixing.
The main producing countries are China and Taiwan. In China, the Wuyi and Anxi regions in Fujian province are well known; in Taiwan, oolongs such as Dong Ding, Oriental Beauty, and Alishan are produced. India, Nepal, and Darjeeling also produce comparable styles.
