White tea

White tea has a history stretching back to the Song dynasty. Emperor Huizong described its distinctive character in his book on tea. The production process is simpler than for other tea types: the leaves are not fixed or rolled, but wither for one to two days in sun or shade.

That withering intensifies the sweet aromas and allows for a gentle enzymatic oxidation. White tea is not caffeine-free: young leaf buds naturally contain caffeine, though the L-theanine present moderates the stimulating effects.
