Kamairicha Zairai comes from Uenohara Seichaen in Saza, Nagasaki, where the tea bushes are *zairai*: grown from seed rather than cloned. The leaves are briefly heated in a pan rather than steamed. The scent is reminiscent of apricot and rain on dry earth, the flavour of almond milk and cashew.

How to brew this tea

Give the tea leaves enough space to unfurl and release their full flavour. Use a generous teapot or infuser. Kamairicha Zairai can be brewed multiple times. Enjoy at least 2 infusions, each with a slightly different character.

The story behind the tea: Ikedoki Tea

In the village of Sonogi, in Japan's Nagasaki prefecture on Kyushu, Ikedoki Tea brings together small, independent tea makers. Founded in 2020 by Yasuharu Matsumoto, the team acts as the link between tea farmers such as Ikeda Chaen and Uenohara Seichaen, and tea drinkers around the world.

Nagasaki produces barely 1% of all Japanese tea. Since 2023, Dutch tea sommelier Marjolein Raijmakers has led the team on the ground.
