Rooibos (Aspalathus linearis) grows exclusively in the fynbos of the Cederberg in South Africa. On the Waterval farm, at the foot of the Skimmelberg, the De Villiers family has been cultivating and processing this shrub for generations, without the involvement of external parties.
The name means "red bush" in Afrikaans, a reference to the reddish-brown colour that develops during oxidation. The flavour is soft and lightly sweet, with an earthy body. Rooibos is a herbal infusion and contains no caffeine.
Since 2021, rooibos has held a Protected Designation of Origin in the European Union, alongside names such as Champagne and Parma ham. Only rooibos from the Western and Northern Cape, including the Cederberg, may carry that name. The plant grows nowhere else in the world.
Storing loose leaf tea correctly is important to preserve its freshness and flavour. Keep it away from the four elements that affect quality: air, heat, light, and moisture.
